Diego Planeta, who has been president of the Settesoli wine cooperative since 1973, has upgraded the winery with state-of-the-art equipment and banished oxidized, dull alcoholic wines. Each individual vineyard parcel is mapped and tracked on a computer. By tracking the sugar and acidity levels during ripening, the grapes are harvested at their peak.
